Shedletsky's: Curtido - South American Style Saurkraut

Curtido is a fermented cabbage dish from El Salvador.

Think of it as a Central American sauerkraut. We take crisp white cabbage and ferment it for at least 18 days in a spicy brine packed full of lime and fresh chillies. We add Mexican oregano for a distinctive and addictive taste.
